Recipe to Make Kuih Ketayap:
1. Make the pancake batter: Mix rice flour, all-purpose flour, pandan juice, coconut milk, salt, and water to form a smooth batter.
2. Cook the pancakes: Heat a non-stick pan and pour in the batter to cook thin pancakes. Cook both sides until they’re firm but soft.
3. Prepare the filling: Combine grated coconut, palm sugar, and a pinch of salt in a pan, cooking over low heat until the sugar melts and the mixture becomes sticky.
4. Assemble the kuih: Place a spoonful of the coconut filling onto each pancake and roll it up tightly.
5. Serve and enjoy: Serve the rolled kuih ketayap while fresh for a sweet, delicious treat.
